(not so perfect) Mini Peach Pies

Remember when we used to get recipes from books and magazines?

I used to get a SLEW of recipes from magazines.  I tucked this one away LONG ago (approximately 2008) in my handy-dandy recipe binder, but just never tried it before.  It includes the fruit of the peach, which is one of my most favorite-est fruits ever.

(no, I am not winning any grammar awards with this post. Whatevs.)

Anyway,  first you need to buy pre-made pie dough, the kind you can roll out on your own.

Never mind that I screwed up and bought already-in-the-aluminum-pan 2 pack, frozen pie dough.  Just a mere technicality.

(Y’all can already tell you’re going to want to pin this recipe because I’m so precise and awesome, I know!)

Even though these little babies did not turn out like the picture in the magazine, and I modified things a bit, they were still entirely edible. TRUST ME ON THIS.

 

Mini Peach Pie Ingredients:

1 refrigerated pie dough

1 1/2 c. diced peaches

2 tbsp sugar

1 tsp cinnamon

3 tbsp crushed graham crackers

1 tbsp melted butter

 

 

 

So first, roll out the pie dough. (whether you had to scrape it off of aluminum pans and roll it up into a ball does not matter…)

Next, you have to peel and cut up some peaches.  If you want, you can use frozen peaches but you have to defrost those first if you’re going to do that.  I personally prefer fresh, however when it is not peach season and you still want these when nary a fresh peach is to be found… Anyway, fresh or frozen, cut ’em up.

 

 

Now it’s time to coat them in sugar and cinnamon. This is when the good stuff starts to happen. 🙂

Next, crush up a couple of graham crackers (cinnamon or regular, whichever) and mix them in a small bowl with the melted butter.

(it’s okay if you’re salivating right now).

Now cut the rolled-out pie dough into five or six 4-inch rounds (use a bowl about that size as a guide), sprinkle some of the graham cracker mixture on the bottom and then spoon the peachy goodness on top.

Lastly, roll up the edges!

 

 

Bake ’em at 400 degrees for about 30 minutes, until pies are golden brown.

If they turn out flat like mine did, whine about it a little and then just get over it, because you know they are still going to be super tasty and you and you family will want to eat every lsat one of them…

 

 

…especially with vanilla bean ice cream on the side!
