Yesterday’s Pie Made Today

October 8, 2009 by Elaine

My mother and father are here until Friday afternoon and have been a great help since the baby was born. They’ve been driving the boys to and from school and mom has been cooking, baking and doing laundry. As well as helping with Baby K.

Yesterday as I passed through the always clean when mom is here kitchen I had a memory of the apple pie that she would often make when I lived in her house. She makes it with this wonderful sugar/butter crumbly topping and I used to hover over it once it was out of the oven and pick off the biggest chunks of topping. Only when she wasn’t looking of course.

So, as I eyed the apples in the fruit basket I asked her if she would make one and it wasn’t long before my father was off to the store to buy pie crusts. She’s a good woman, that mom of mine. SUCH a good woman. Yeah, and by around 11 a.m. or so the house smelled of delicious apple pie and I was poking my head in the oven door to see and smell it’s goodness.

And a few of the crumbles may have found their way into my mouth while mom and dad were picking the boys up from school. Ah, just like old times….

Oh and after dinner (yes, I waited that long and yes, I’m really surprised too) I enjoyed my slice with a scoop of vanilla bean ice cream, thankyouverymuch.

(you know you want some…)

Yummo, home made apple pie with ice cream – one of life’s simple pleasures.

Years from now you will probably be cooking this same apple pie for Katie after she has her own babies – how sweet will that be?!?!
